Catering is the restaurant packed to travel: birria in insulated pots with the consommé sealed, tortillas wrapped hot, salsas in the same containers we use in the kitchen. Nothing gets made ahead that shouldn't be.
Drop-off comes with everything set to serve. Full service comes with a taco cart, a cook carving pastor off the trompo, and staff who clean up after. Both come with the cantina's bar if you want it.
