Birria is Jalisco's slow-cooked answer to a cold morning: chiles toasted and blended, beef submerged overnight, then braised until the broth turns deep red and the meat shreds by itself.
We do it the long way, every day, and never in a pressure cooker. The tortillas are dipped in the fat cap, griddled with oaxaca cheese, and folded around the meat. Dunk. Repeat.
Rich broth, bright drink. Tequila, lime, orange and grapefruit soda in a clay cup, salted rim. Or a Modelo with lime, no judgment.
